Learn to bake bread like a Bedouin on your trip to Wadi Rum, Jordan. Imagine sitting in the desert, surrounded by dramatic sandstone formations, goats running by, enjoying local tea, and baking some warm traditional Arbood bread with Bedouins. Well, that’s what I got up to on my Wadi Rum cooking adventure, read on to find out more.
How The Day Started
After checking into the Memories Aicha Luxury Camp, I headed out into the red and white dunes of Wadi Rum Jordan.Â
Driving through the desert in a 4×4 Jeep, I enjoyed the scenic view of dramatic sandstone mountains and just the pure bliss of nature.
The Arrival
I was welcomed into the desert home and offered delicious tea. The family was amicable and welcoming. I spoke to the family as they stoked the fire and chopped the vegetables.
Baking The Arbood Bread
The Bedouin has mastered the art of baking bread on an open fire, using the ash from the earth to cook bread in 25-30 minutes.
Locally in Jordan it is known as “Arbood” bread and eaten by Bedouins. (desert nomads)
The simple ingredients of flour, salt, and water were mixed and kneaded together into a dough. Mohammed then transferred the dough to a flat pan embedded in the fire and sand. Using a stick, we covered the bread in the hot ash from the fire to cook the bread.
Preparing The Stew
While the bread was cooking, my guide prepared a delicious vegetable stew to accompany the bread, and one of the family members organized a side salad. The stew consisted of vegetables and beans, which made it quick to prepare and vegetarian-friendly.
After around 25-30 minutes, Mohammed removed the bread from the fire. Mohamed banged the pan hard onto the ground, causing the ashy remnants to fall off; then he beat the bread with a stick several times, before peeling it off with a knife.
The Verdict
The Arbood bread and vegetable stew tasted delicious. The stew was rich in flavour, and the bread warm and lightly salted.
Baking bread with Bedouins is a must on your Jordan adventure. It was an eye-opening and informative insight into Bedouin culture and an experience I will never forget. I mean it’s not every day you that can say you baked bread in ash in the middle of the desert is it?Â
